Financiers are a type of small French cake that have become an integral part of French patisserie culture. They are traditionally rectangular and made with almond flour, brown butter, and powdered sugar.

Sometimes recipes might not work the way you want, this can be due to a number of things, but mainly: different brands of flour may have different protein levels and water absorption capabilities that may result in a different texture. 

This is similar with sugar and butter, but with varying respective moisture and fat contents.   To provide you with a higher success rate with the recipe, we will link you to the ingredient that I use, so that you get the closest results.

INGREDIENTS
  • 30g self-raising flour
  • 1tbsp tbsp baking powder
  • 42g egg whites
  • 65g caster sugar
  • 32g ground almond
  • 39g brown butter
  • 40g almond praline 
  • 20ml milk
  • Almond flakes to decorate

 

     

    EQUIPMENT

     

    DIRECTIONS
    • Preheat oven to 150C. Grease the muffin tin with butter. 
    • Brown the butter in a pan.
    • Whisk the egg whites and sugar until frothy.  Add the ground almond, baking powder and flour. 
    • Mix until just incorporated.
    • Stir in the butter.  Once incorporated, add the praline and mix throughly. Add the milk and mix. 
    • Scoop the batter into the greased muffin tin and fill until 40% full.  Top with almond flakes.  Let the batter rest for 15 minutes and bake for about 25 minutes.
    • Allow to cool before serving.
