Double Chocolate Chip Muffins

  RECIPE BY VANIECE

 

YIELD: 6 MUFFINS

ACTIVE TIME: 20 MINUTES

BAKING TIME: 15 MIN

TOTAL TIME: 35 MINUTES

INGREDIENTS
  • 60g Self-raising flour +1 tbsp to coat chocolate chips
  • 30g icing sugar
  • 30g vegetable oil
  • ½ tsp baking powder
  • 15g honey
  • 20g almond Flour
  • 1 egg (room temperature)
  • 15g Cocoa Powder
  • 30 ml buttermilk
  • Pinch of salt
  • 30g dark chocolate chip

 

 

 

 

DIRECTIONS
  • Sift all dry ingredients. Preheat oven to 170ºC.
  • Whisk egg light in colour. Add icing sugar and whisk until creamy white in colour.
  • Gradually whisk in vegetable oil and honey, mix until incorporated.
  • Fold in flour, cocoa powder, salt and baking powder with a spatula.
  • Stir in the buttermilk and mix until just incorporated.
  • Coat the chocolate chips with 1tablespoon of flour and add them to the batter. Mix until just incorporated, do not overmix.
  • Line a muffin tin with paper cups. Scoop mixture into the tin and fill them 50% full. Sprinkle chocolate chips and fill the rest of the cup with the batter until 70% full. Add more chocolate chips on top.
  • Bake for 15 minutes at 170ºC.
  • Carefully transfer muffins to a cooling rack and allow to cool.
