Earl Grey & Honey Scones

INGREDIENTS
- 167g plain flour
- 1tbsp tbsp baking powder
- 1/4 tsp salt
- 42g unsalted butter (cold)
- 15g caster sugar
- 15g honey
- 5g Loose leaf Earl Grey Tea + 2 tea bags
- 50ml milk (warm)
TO SERVE WITH:
- Marmalade
- Clotted Cream
- Even more honey
DIRECTIONS
- Bring the milk to boil and the tea bags in warm milk. Blitz the loose leaf tea with a blender and set aside. Allow the infused milk to cool completely before using.
- Preheat oven to 200C.
- Sift flour, baking powder, blitzed loose leaf tea. Add butter and salt. Rub together until crumbly and sand like.
- Add the sugar and mix.
- Add milk and honey and mix until just combined. Do not over mix.
- Roll out the dough until it’s thickness is 1.7cm. Cut out 8 scones using a round cutter and transfer onto baking tray lined with parchment paper.
- Bake for 12 minutes at 200C until golden brown.
