Maple and banana is the ultimate combo anytime of year! A slice of fluffy banana bread drizzled with maple syrup and a cup of mocha is my kind of afternoon tea! 

Every bite of this heavenly banana bread is bursting with flavor, from the sweet and ripe bananas to the warm and comforting notes of cinnamon and nutmeg. The texture is perfectly moist and fluffy, making it a melt-in-your-mouth experience that will leave you craving for more. The whole experience is taken to the next level with maple syrup, the nutty, caramel notes will perfectly complement the spices.  It's the ultimate comfort dessert.

INGREDIENTS
  • 220g banana
  • 210g cake flour
  • 60ml vegetable oil
  • 50g maple syrup
  • 3 eggs
  • 40g golden caster sugar
  • 35g dark muscavado sugar
  • 30ml milk
  • 5g baking powder

 

     

    EQUIPMENT

     

    DIRECTIONS
    •  Preheat oven to 180C
    • Whisk sugar and eggs until frothy
    • Mash bananas throughly, add milk and maple syrup
    • Add oil to the egg mixture, combine throughly and add banana mixture
    • Add cake flour and baking powder, gently mix until combined
    • Pour the mixture into a loaf tin and bake for 30-35 minutes at 180C.
    • Allow to cool before serving.
