Granola is a great source of whole grains and healthy fats, making it a perfect addition to these muffins.   RECIPE BY VANIECE

 

YIELD: 4 MUFFINS

ACTIVE TIME: 20 MINUTES

BAKING TIME: 15 MIN

TOTAL TIME: 35 MINUTES

INGREDIENTS
  • 40g caster sugar
  • 30g vegetable oil
  • 60g self raising flour
  • 4g baking powder
  • Ground almond 20g
  • 1 egg
  • 35g granola mix
  • ~2tbsp dried raspberries to sprinkle on top
  • 4tbsp buttermilk

 

 

 

 

DIRECTIONS
  • Preheat oven to 170C
  • Beat eggs and sugar until light and frothy
  • In a separate bowl, combine ground almond, flour and baking soda
  • Add the mixture into the eggs and mix
  • Add vegetable oil ans buttermilk and mix until just incorporated
  • Line muffin tin with liners
  • Scoop mixture into tin evenly, 70% full for each muffin
  • Top with one tablespoon of granola mix for each muffin and sprinkle free dried raspberries on top!
  • Bake for 15 minutes
